Baked Lobster

"Mothers don't sleep, They just worry with their eyes closed."


When we are young, we usually play and hug our moms; but as we grow older we tend to hang with friends more often than family. Regardless of how we behave, our mom will never complain and leave us. On this special day, let's use this opportunity to give thanks to our Mom for always giving us the strength and will to succeed. There is really no better love than the one we receive from our Mom.




INGREDIENTS

3 pieces lobster tails 5 to 9 oz. each

2 tablespoons melted butter

2 teaspoons parsley flakes

5 teaspoons juice of fresh lemon

1 cup water

1/2 teaspoon salt

A pinch of ground black pepper

2 tbsp MCT Oil


PROCEDURE

1. Preheat oven to 350 degree Fahrenheit.

2. Make a vertical slit on the lobster tail using a pair of kitchen shears. Start from the top part moving towards the tail end.

3. Expose the lobster meat by gently pulling the sides created by the slit in opposite directions. Pull the meat using your hands. Do not completely remove the meat.

4. Arrange the lobster in a baking tray (tray should have an elevated border)

5. Combine MCT oil, salt, pepper, butter, and parsley in a bowl.

6. Using a basting brush, brush the butter mixture over the exposed meat of the lobster

7. Pour water on the baking tray where the lobster tails are sitting.

8. Bake for 22 to 25 minutes until golden reddish in color.

9. Let cool and then transfer to a serving plate.

10. Serve with lemon butter sauce. Happy Mother's Day!
